Shincha Kunpu is a lightly steamed traditional Sencha that has a beautiful shiny tea leaf and grassy golden cup. Shincha Kunpu is also one of our Eighty-Eighth Night Shinchas. Eighty-Eighth Night Shincha refers to Shincha picked on the 88th day after the first day of spring in the traditional Japanese calendar, normally around May 2nd. The Eighty-Eighth Night - "Hachijuhachiya" in Japanese - is a special day in Japanese agriculture since it is considered about the time all the plants begin to sprout.Origin: Honyama, Shizuoka
Harvest: First Flush 2021
Den's Preferred Brewing:
Leaf-water ratio: 2-3g(1 rounded tsp) per 4oz
Steep: 90 sec
2nd Cup: Water 180F; Steep 30 sec
You can also brew with hotter water, say 200F for 45 sec. This way, the wild grassy flavor comes on strong and you can taste the deep nature. I recommend you try brewing it both ways.
Den's 2021 Shincha Kunpu Tasting Comments:
Similar to Hashiri, the rising aroma from the bag reminded me of a good harvest, and impressed me even more with a seaweed aroma. But the first sip was lighter than I imagined from its aroma. While I waited for the second sip, I realized that a comfortable savory taste was persistently growing deep in my mouth and this taste was layered sip after sip. Then I realized that I liked the slightly toasted grassy aroma coming through my nose. The second cup had a consistent flavor meaning the harvest was well grown in good nutritious soil, otherwise the second cup would be very thin. As premium quality tea, Shincha Kunpu 2021 is not a flamboyant tea but is in the line of royal quality of Shizuoka Senchas. As we mention every year, Kunpu predicts the quality of our tea throughout the coming year and it is considered our standard of a traditional Shizuoka tea. Now I can tell that all our teas will be great throughout 2021 and into 2022.
