Another matcha graces our warehouse. This tea is made of the same material as our Organic Ceremonial Matcha. This is a single-cultivar matcha, which is rare in the world of matcha. The cultivar used for this tea is Yutaka-midori and, while it does not handle cold well, the warm Kagoshima climate is perfect for its cultivation. This cultivar has become a staple of Kagoshima tea for the last 75 years. This matcha has a forest green cup color, smooth taste, soft throat sensation and enchanting aroma.

Tasting Profile
We noticed there was a subtle artichoke note, a light sweetness and savoriness that progressively became slightly astringent. The umami and flavor of this tea reminded us of pan-fried shiitake mushrooms.
Den's Preferred Brewing
Matcha: 1 g or 1 chashaku scoop or 1/2 tsp
Water: 2 oz @ 180°F
Whisk matcha well with a chasen (bamboo whisk).
