Our Yuzu Kukicha with Matcha is made with first flush kukicha, dried yuzu chips, and a hint of matcha. Yuzu is not usually consumed by itself due to its sourness; instead, its rind is used as a garnish or small slivers are added to dishes to enhance their flavor. Since yuzu is usually available only in the winter in Japan, we stock this tea only for a few months or while supplies last.
Origin: Shizuoka
Harvest: First Flush
Species: Yabukita
Tasting Profile:
Yuzu is distinct from lemons, limes, or any other Western citrus fruit. What results from brewing this tea is a harmony of flavors. The kukicha used has a mild taste that is slightly bitter, sweet, and astringent. The matcha provides a touch of sweetness and umami mouth feel. The flavor and aroma of the yuzu bring the whole experience together, gently awakening the drinker and suffusing the surrounding air with a slightly sweet, citrus aroma.
Den's Preferred Brewing:
Leaf-water ratio: 2-3g(1 heaping tsp) per 4oz
Water: 180F; Steep: 60 sec
2nd Cup Water: Boiled; Steep 15 sec
