Our Organic Sencha is carefully grown in our contracted tea farm in Shizuoka under the strict specifications of JAS (Japanese Agricultural Standard). This is an organic program that is equivalent to NOP (National Organic Program) of the US.
The tea is produced by farmers we have been working with for over a decade. At this farm, they use organic fertilizer after laboriously removing the weeds by hand. This is because they cannot use chemical weed killers. Also, since pesticides cannot be used, they sometimes come across snakes while working.
When we asked about what makes their tea so special, they told us that they do not produce a lot of tea on purpose. They believe that this allows more nutrition to be distributed to each tea leaf. Our tasting confirms this to be true.

Tasting Profile:
The brewed cup is a light yellow, almost luminous, color. The flavor is nuanced while still possessing the classic sencha flavor profile. The aftertaste is refreshing with a hint of dryness.
