Compare and contrast our Fukamushi Sencha Special and Fukamushi Sencha Chiran.
When we cupped these, we found there was an obvious difference in the color of the liquor. We feel that this contrast has its root in the cultivars used for these teas. The Special uses the popular Yabukita cultivar while the Chiran uses the lesser-known Asatsuyu cultivar. These teas are also grown in different areas of Japan; the Special is grown in Ogasa, Shizuoka while the Chiran is grown much further south in Chiran, Kagoshima.
When tasted, the Special offers a consistent, reliable balance of bitterness, astringency, and sweetness. The Chiran is a bit more subtle, and can be likened to gyokuro in its sensitivity and umami character. Both of these teas do well when attention is kept on the brewing process.
Like our other sets, comparing these two teas side-by-side can really highlight the differences between them.
