Iced Matcha in the Ceremonial Style

Making Iced Matcha the Ceremonial Style
To make a delicious cup of iced matcha, add a little hot water to your matcha and knead it with a chasen to create a thick matcha paste. This will draw out more aroma and flavor from the matcha and is better than using only cold water.
- Place 2 grams (2 chashaku scoops or 1 teaspoon) of matcha powder into a matcha bowl. To eliminate clumps, sieve matcha with a strainer before it goes into the bowl.
- Pour 1 oz of HOT water into the bowl and knead it to make a smooth, thick matcha liquid.
- Add 3 oz of cool/cold water and whisk the matcha with a chasen.
- Add ice.
