Koicha & Usucha Uncovered

In a recent blog post, we talked about the differences between koicha and usucha. While, in the West, we use the terms "ceremonial grade matcha" or "ceremonial matcha", these terms are largely unused in Japan. "Koicha" and "usucha" are more widely used and can better indicate for what purpose a matcha is best used for. Pictured above is a bowl of koicha, or "thick tea".
