Tea Highlight: Hojicha
This weekend, we are highlighting our hojicha teas. Hojicha (also, Hōjicha, 焙茶) is a kind of Japanese tea that has been roasted. It is refreshing, with a buttery, nutty taste and virtually no bitterness. It contains the lowest level of caffeine of any Japanese green tea.
When roasting hojichas, a radiant heat technique is used which expands the green stems into a longer and fatter shape. This process results in an elegant aroma. The roasting process also creates a compound found in hojicha called pyrazine, which is known to have different health benefits. You can read more about it in our blog post regarding tea aromatics.
