The best of both white and brown rice. Our Nanayume 70 is a 70% milled rice from Hokkaido, meaning it has 70% of its rice bran layer and germ removed.
This rice is imported in its brown state via a chilled container from the snowy island of Hokkaido. The rice is then polished in a local facility in Los Angeles upon ordering, ensuring a type of freshness that most Americans do not experience in their rice.
This rice is made using the combined rice cultivars Nanatsuboshi and Yumepirika, hence the name "Nanayume 70". Yumepirika brings a gentle kind of sweetness, while the Nanatsuboshi is more balanced in its profile, accentuating the flavor of your side dishes. Perhaps for this reason, Nanatsuboshi is revered by sushi chefs across Hokkaido, as 70% of sushi restaurants in Hokkaido use it.
Because of the amount of polish this rice goes through, we found that it possessed the water-like sweetness of white rice while its mouth feel was grounding and slightly chewy, reminding us of brown rice. Polishing the rice this way retains some of the nutrition of the brown rice, but not so much that it becomes overly chewy or nutty. Simple, yet nourishing.
